Tim's Pilaf

2 or 3 chicken breasts (marinated to preference)
4 cups cooked rice (brown or white)
1/4 sliced almonds
1 cup or so mixed frozen vegetables
1/4 cup raisins


I use a rice cooker because without one I invariably burn the rice.

While the rice is cooking...

Cut the chicken into 1/2 inch cubes. Then cook with minimal oil until tender and cooked through.

Thaw the vegetables in a microwave or by steaming on the stove top. The vegetables should ideally be room temperature.

Once the rice is finished. Combine everything in one large pot. I use a wok. Serve after mixing thoroughly.
